Cardamom Scones

Scones are an easy snack we love to make. Good with a cup of tea, topped with cream and jam, especially on a rainy day!

Cardamom Scones

A fragrant scone recipe with a twist

Ingredients
  

  • 400 g Self raising flour
  • 75 g Butter
  • 200 ml Milk
  • 50 g Caster sugar
  • 12 Green cardamom pods (you can increase or decrease to adjust the prominence of the cardamom flavour)

Instructions
 

  • Rub the butter and flour together.
  • Grind the middle of the cardamom pods into powder and discard the shells of the pods (a mortar and pestle is ideal for this)
  • Add the sugar and the ground cardamom.
  • Mix the milk in with the dry ingredients.
  • Preheat the oven to 200 degrees C fan
  • Roll out the scone mix on a lightly floured surface to 1.5cm-2cm deep. Cut into triangles.
  • Place the scones on a baking tray and brush with the beaten egg. Bake for 14-16 minutes (until lightly golden)
  • Place the scones on a cooling rack ( with a clean tea towel if you have one handy)
